Margarita Cupcakes (Adults Only, Please!)
If you know me, then you know I love to bake cupcakes. I have a few friends that like to bake as well. We used to get together every month and bake cupcakes, but we have been busy with life lately, so I haven’t baked in awhile. Anyway, it was my birthday was last month and I invited a few friends out to celebrate at my favorite Mexican restaurant. Well, since it was a birthday celebration, I decided to make cupcakes. I was going to bake pink champagne cupcakes, which are fabulous, but since it was a Mexican restaurant, I decided I wanted something different. I searched Pinterest and found margarita cupcakes. I love Pinterest! Who doesn’t? That’s a topic for another blog. So, these cupcakes! They do contain alcohol, so I would say keep away from the kids. If that means hiding them on the top shelf of your bedroom closet, well then, do what you gotta do. Oh, and the frosting??? OMG, can you say yummy? If you like lime, you will love the frosting. There was a bit of frosting left over after I frosted the cupcakes, and let’s just say the frosting bag just might have been emptied straight into my mouth. We have all been there at one time or another, right? So, if you were one of the lucky ones that got one of these cupcakes, give it to me straight, how were they? Margarita Cupcakes (with tequila)
These are a tasty treat to add to your Mexican Dinner Party, but they do contain alcohol, so adults only, please.

Instructions
Prepare cupcakes:
Preheat oven to 350 F. Line cupcake pan with liners.
In a small box, mix together the margarita mixer, tequila, and Grand Marnier.
In a large bowl, mix the cake mix, egg whites, canola oil,and lime zest. Add in the margarita mixture the from previous step. Mix on low for 30 seconds, then increase speed to medium for two minutes. The batter may be slightly lumpy.
Spoon the batter into the cupcake pan. ( I highly recommend using a Bakelicious Cupcake Batter Spoon - it measures out the perfect amount of batter every time You can find it online or at Hobby Lobby). Bake for 20-25 minutes depending on oven or until toothpick inserted into cupcake comes out clean. Let cupcakes cool before frosting.
Prepare frosting:
In a large mixing bowl, add butter, and beat with electric mixer until fluffy.
Add the salt, lime juice, and the lime zest. Add powdered sugar one cup at a time. Mix until consistency is thick. Add more powdered sugar if needed.
Spread or pipe on the frosting.
Use lime slices on top for garnish.
