Margarita (cupcakes), anyone?

If you know me, they you know I love to bake cupcakes.  I have a few friends that like to bake as well.  We used to get together every month and bake cupcakes, but we have been busy with life lately, so I haven’t baked lately.  My birthday was last month and I invited a few friends out to celebrate at my favorite Mexican restaurant.  Well, since it was a birthday celebration, I decided to make cupcakes.  I was going to bake pink champagne cupcakes, but since it was a Mexican restaurant I decided on margarita cupcakes.  My, oh, my, they were scrumptious. I found the recipe on Pinterest.  I love Pinterest! Who doesn’t? That’s a topic for another blog.

Margarita Cupcakes (Adults Only, Please!)

If you know me, then you know I love to bake cupcakes.  I have a few friends that like to bake as well.  We used to get together every month and bake cupcakes, but we have been busy with life lately, so I haven’t baked in awhile.  Anyway, it was my birthday was last month and I invited a few friends out to celebrate at my favorite Mexican restaurant.  Well, since it was a birthday celebration, I decided to make cupcakes.  I was going to bake pink champagne cupcakes, which are fabulous, but since it was a Mexican restaurant, I decided I wanted something different.  I searched Pinterest and found margarita cupcakes.  I love Pinterest! Who doesn’t? That’s a topic for another blog.  So, these cupcakes! They do contain alcohol, so I would say keep away from the kids.  If that means hiding them on the top shelf of your bedroom closet, well then, do what you gotta do.  Oh, and the frosting??? OMG, can you say yummy?  If you like lime, you will love the frosting.  There was a bit of frosting left over after I frosted the cupcakes, and let’s just say the frosting bag just might have been emptied straight into my mouth. We have all been there at one time or another, right?  So, if you were one of the lucky ones that got one of these cupcakes, give it to me straight, how were they?  If you decide to make them for yourself, you will not be disappointed!  Below is the recipe.

Margarita Cupcakes (with tequila)
These are a tasty treat to add to your Mexican Dinner Party, but they do contain alcohol, so adults only, please.

Instructions
Prepare cupcakes:
  1. Preheat oven to 350 F. Line cupcake pan with liners.
  2. In a small box, mix together the margarita mixer, tequila, and Grand Marnier.
  3. In a large bowl, mix the cake mix, egg whites, canola oil,and lime zest. Add in the margarita mixture the from previous step. Mix on low for 30 seconds, then increase speed to medium for two minutes. The batter may be slightly lumpy.
  4. Spoon the batter into the cupcake pan. ( I highly recommend using a Bakelicious Cupcake Batter Spoon - it measures out the perfect amount of batter every time You can find it online or at Hobby Lobby). Bake for 20-25 minutes depending on oven or until toothpick inserted into cupcake comes out clean. Let cupcakes cool before frosting.
Prepare frosting:
  1. In a large mixing bowl, add butter, and beat with electric mixer until fluffy.
  2. Add the salt, lime juice, and the lime zest. Add powdered sugar one cup at a time. Mix until consistency is thick. Add more powdered sugar if needed.
  3. Spread or pipe on the frosting.
  4. Use lime slices on top for garnish.

Lulawho? And a Unicorn too??

Have you been introduced to Julia yet?  What about Cassie or Lindsay?  Have you met Irma? How about Carly?  Well, if you know these names, then you know Lularoe.  If these names have not been uttered 3000 times from your lips in the last few months, then let me introduce you.

Lularoe is a clothing company.  They have been around for three years, but have become increasingly popular over the last year.  I was introduced to Lularoe by my sister.  I went to visit her last spring and she had these buttery soft leggings that had this cool print on them.  Then over the next few months, I noticed she was posting about them on Facebook.  I started to take notice.  I started to ask questions.  I started to wonder if I needed these leggings.  My sister added me to a couple of the groups she belonged to.  I happened to comment in one of the groups and ended up winning my very first pair.  I was hooked.  My “collection” started to grow.

Then I found out they had shirts, dresses, and skirts. What??? I added myself to more of the groups on Facebook.  I found out the clothing is sold by individual consultants through at home parties or on pop-up parties posted on Facebook.   I found a consultant near my home whom was having an actual show/party.  I decided to go and came home with a pair of those buttery soft leggings, a Julia, (one of their dresses) and a Lindsay (a long cardigan type cover-up).  Since them I have added a classic T, a longer t that can paired with the leggings, and a Cassie, their gorgeous pencil skirt.  I’m addicted!!  These pieces of clothing are some of if not the most comfortable things I have ever worn in my life.  Why are women going crazy over them, you ask.  Well, I asked too and these are some of the responses I got.

Christine from Arizona said, “I Love LLR because of all the fun prints, and styles.” Maureene from New York said, “I love LLR because the clothing is so soft and comfy and because it makes me feel good about myself and that I look good.”  Jodi from Jacksonville said, “I love LLR because the leggings make feel confident and sassy.  I love the beautiful and zany prints equally.”  Miranda from Alabama said, “I love the wild print and bright colors bit also love being comfortable.”  Sara from Massachusetts said that the clothes are gorgeous, comfortable and they make her feel great.  She loves that the company brings together women supporting each other.  My sister said they are super comfortable, colorful, and fashionable.  She has a “few” pair.

Now about that unicorn thing.  Lularoe only makes a certain number of prints for their leggings.  When consultants order, they cannot order specific prints, only sizes, so they don’t even know what they are getting until they open the box that was delivered.  Many consultants will get different prints.  For this reason, you may see a consultant have one print that you just have to have, but then cannot find it anywhere else.  That is a unicorn. That makes people hunt.  What that really means is that people will spend hours upon hours joining every Lularoe Facebook group, then searching through the photo albums in hopes of finding their unicorn print.  Sometimes they find it, sometimes they don’t.  Here are my unicorn prints.  I was lucky enough to find them.  Totally cute for my next trip to Disney, right?  Now if I can just find the red and white polka dot Irma!!

The leggings seem to be the most popular item at about $25.  Their skirts and dresses range from about $32 to $40.  Still a bargain for such comfortable clothing you will wear again and again.  Many consultants do special pricing for teacher, nurses, and other professions.  Lucky me!!!

Oh, My, Blog!

Well, here it is.  My very first blog post.  Why, you might ask?  Well, everyone else is doing it, right?  So, I might as well too.  But really, the reason I decided to blog is because I had a dream about it.  I woke up one morning after having a dream that I was a blogger and then couldn’t stop thinking about it for days, weeks even.  I did a bit of research.  I looked at other blogs I follow.  I even found a site that explains how to set up a blog step by step.  I ran the idea by a few friends and they said go for it.  If you know me, you know that I love anything and everything about Disney.  It was Walt Disney that said, “If you can dream it, you can do it.” So, I am.  How hard can it be?  I’m not sure yet.  What will I write about?  I’m not sure yet.  Will people read it?  I’m not sure yet.  I’m not looking to become famous.  I’m just looking to share my love of cupcakes, Disney, crafting, and whatever I find interesting with my friends and family.  If you have any ideas, please let me know.  So, sit back, relax, and enjoy the ride, but remember, remain seated with hands, arms, feet and legs inside the vehicle.
